Miso vegetable soup with ginger and chilli

I’ve always loved the salty flavour and lightness of miso soup, in fact, Japanese food in general is a cuisine I really enjoy for the taste and health benefits.  When I was younger, at uni and a bit broke, I’d just have miso soup on it’s own, sort of like a really healthy cup-a-soup, but over the years I’ve started adding different vegies and flavours to make it interesting.  Any light seasonal vegie would be fine here but the carrots and zucchinis work really well because I was able to slice them super finely with the mandoline.

And I don’t usually do this but I worked out that this tasty, fragrant soup full of fresh, crisp and spicy things is only 250 calories, low in fat and high in fibre …. ahem, I may have gained a few kgs over Christmas #gloomyface, so I think I’ll be making this for lunches for the next few weeks.

Oh and you could always add some diced tofu but I’ve never been able to get into that despite my love for vegetarian/ vegan food.

Cinemagraphs by Jamie Beck & Kevin Burg

These charmingly beautiful cinemagraphs caught my eye recently; a cinemagraph, from what I can gather, is a sort of refined, more delicate and high quality version of a GIF, which concentrates on movement in one part of the photo while the remainder stays still.

These photographs are already lovely but then are brought to life by the exquisite detailing; check out the glittery shoes and that sweet little bunny!

It’s amazing what these talented folks can do isn’t it?

Quinoa, cherry tomato, tuna and feta salad

It’s that time of year when I start getting into clean and healthy salads.  This pretty salad might look light but is really substantial with a decent amount of protein and is packed with grainy quinoa, fresh, sweet tomatoes, crisp spicy radish, smoky tuna and salty feta.  I also added a creamy lemon dressing which topped off an easy, delicious and aesthetically pleasing lunch on the weekend (how food looks is important, it doesn’t always have to be beautiful but when it is, I enjoy eating it that much more).

The many faces of Sam Rockwell and happy Friday

I love this guy; he’s a brilliant, yet underrated actor, makes some really interesting, often off-the-beaten track movies and manages to look completely different in every single one of them …. to the point where I sometimes don’t recognise him.  Also he’s kinda cute and has brilliant comedic timing in that sort of effortless way.

Some of Sam’s new movies scheduled for release include Laggies, Better Living Through Chemistry and Poltergeist.

Lemon raspberry trifle with Limoncello

Well it’s just not Christmas without some sort of trifle so this year, I made a lemon flavoured trifle with my favourite berry, raspberries.  You don’t have to make this only at Christmas either, it’s an easy yet pretty summertime dessert which you can make ahead and also, anything with layers of different things looks like you went to heaps of effort.

And like any other trifle, pieces of sweet cake were drizzled with liqueur but this time I used Limoncello.  I’ve started using Limoncello around Christmastime as a sort of tradition; it’s intensely lemony/sweet and goes with so many cocktails and dessert recipes, it’s really lovely.

The boozy cake (I went a bit overboard with the Limoncello, oops!  Feel free to take it down a notch) piled with creamy, fluffy mascarpone, gorgeously rich lemon butter, fresh seasonal raspberries and a dollop of cream scattered with crunchy, flaked almonds was very well received.  I think most people enjoy these sorts of creamy, lush desserts don’t they?

Italian peanut butter hot chocolate

PB hot choc

We in Australia can become a bit gloomy about our hot Christmases.  Don’t get me wrong, Christmas is lovely and all that but we miss out on all that cosy, frosty stuff.  And if I see one more ad with Santa surfing or wearing board shorts ..

So I thought I’d pretend we’re having a snowy Christmas by making a hot chocolate recipe I love; Italian hot chocolate with peanut butter added!  So good and so decadent, you really need to serve it with a spoon.

Admittedly, while I was making this, then taking the photos, feeling a bit hot and sweaty I started wondering what on earth made me think making hot chocolate on a summer day would be anything like a good idea but then …. both Ant and I tasted it; oh my, thick, creamy, silky smooth, darkly chocolate with a hint of peanut butter which made it all worthwhile.  On a chilly night in your PJs, curled up on the couch, this would be perfect.
