Sweet potato hummus with tzatziki and spicy pita chips

I based this on your basic chickpea hummus but added baked sweet potato and a teeny bit of chilli.  It seems I’ve always eaten hummus and tzatziki, I sometimes make these dips from scratch and sometimes buy them ready made, either way they’ve made up a large part of my lunches over the past 15 years or so.

Seeing as we’re in cooler weather still and have a lot of gorgeous sweet potatoes around, I wanted to try a sweet potato hummus and also because, even my favourite things to eat need an upgrade every now and again.

This dip tastes sweet and slightly spicy with a pleasing, subtle peanut flavour.  It was a wonderful contrast with the cool, creamy and zesty tzatziki and crunchy, spicy pita chips.

Australian made – Nerada tea review, a giveaway and a recipe for vegan Chai tea pancakes (CLOSED)

I don’t know about anyone else, but I can’t get on with my day until I have my morning cuppa and going to bed without a cup of tea just doesn’t seem right.  Tea is calming, comforting, it brings people together, has many health benefits, there are so many different flavours, and for these reasons, I’m a tea lover from way back.  I was very lucky recently to be contacted by Nerada Tea, one of my favourite brands, to review some products and to offer a giveaway.

I’m a regular purchaser of Nerada’s black and chamomile teas and for the first time, tried both the Rooibos vanilla and peppermint teas;

The Rooibos vanilla is so lovely and softly sweet with such a well rounded, aromatic vanilla flavour, it’s one of my favourite teas now.  As you can see from the images, the colour is amazingly golden and so pleasingly to look at, it’s almost too easy to curl up on my favourite part of the lounge and have a time out for a few minutes.

The peppermint tea is a herbal infusion which has a really fresh, cool, subtly sweet peppermint flavour which isn’t at all overpowering – I loved having this after a meal and found it really uplifting.

In light of the last point, I thought I’d use the Rooibos vanilla to make Chai (tea) inspired, vegan pancakes for a healthy, sweet breakfast treat.

I was super pleased at how these turned out; fluffy with subtle vanilla tea, spice and orange flavouring, and they paired really well with sweet maple syrup and toasted pecan nuts.  You don’t need to be vegan to enjoy these at all, in fact, they make a hearty, health conscious breakfast for everyone in the family (and you get to save your eggs!).

Penne with broccoli, garlic, chilli and pine nuts

A spontaneous dish I made initially to use up the rest of the broccoli in the crisper and have made quite a few times since.

This rustic dish was lovely with simple ingredients; the freshness of broccoli, a subtle hit of chilli, some crunchy nuts and salty Parmesan, all piled up in a bowl invitingly.  I served ours with avocado because we had a ripe one in the fruit bowl and because well, everything’s better with avocado.

Berry almond brioche pudding

I’m really very enamored with brioche pudding these days.

This one’s full of squishy blueberries and crunchy almonds and was gorgeous with a drizzle of cream.  I’m amazed actually, that a tiny bit of effort with a bit of bread; albeit lovely and luxurious brioche (I used a frozen one I made previously but you could always buy it from a bakery or supermarket) and fruit, nuts and cream results in this soft, crunchy topped, sweet treat.

Beef bourguignon with sweet potato mash

It’s not so much a Bastille Day we had on the weekend, as a Bastille week because this is the second French dish I’ve posted.  And why not after all?  French food is amazing; classy and unashamedly seductive.

And speaking of classy and seductive; I remember travelling by train to Paris years ago and sitting across a perfectly understated, stylish, sweet French girl and her friend on holidays from their home town, who struck up a conversation with me.  I was fascinated by this girl (secret girl crush I’m sure) as everything she did and said seemed so interesting and otherworldly to an Australian student wearing pigtails, old jeans, Doc Martens and carrying a backpack.

Anyway, as is fairly evident from my recipes, I don’t eat a lot of red meat but when I do, I go all out.  This classic dish couldn’t be easier or more economical but the results are always amazing.  Flavoursome, herby, red wine sauce with soft, fall-apart pieces of steak and hearty vegetables served on mashed, fluffy, very cosy sweet potato.

So on a lazy afternoon we got my nanna’s fancy plates out and had quite a few glasses of red wine with this sort of retro dish which never goes out of style.

French onion soup

It’s very cold and rainy in my part of the world lately.  We live in a warm place normally and winter is generally a gorgeous break from the humidity but this year we’re all suffering in that sooky way people who are used to hot weather do.  I’ve been living on soups, toast, hot chocolate and lots of tea.

So in keeping with this, my other half and I made French onion soup recently and it was amazing!  I’ve never made this French classic before and it came about because we purchased too many onions and the obvious choice was a gorgeous, rich, slightly sweet, luxurious, caramelised onion soup with toasty cheese croûtons on top.  It takes a while but is super easy and the perfect meal for a frosty-cold afternoon.

Roast cauliflower with lemon, chilli and pine nuts

I don’t eat enough of this healthy vegie.  The other day I roasted some cauliflower florets with lemon, chilli and pine nuts and it was delicious; slightly sweet and spicy with a nutty crunch, and not at all like the cauliflower mornay some of us might remember from being kids.

Lemon coconut bars (no bake)

I love these old-fashioned, citrusy, sweet little bars and they’re so easy to make.  I whip up a batch, freeze them and take them out to defrost for dessert emergencies (no really!  There is such a thing, you know there is).   You can also swap the lemon juice for lime for an even zestier flavour.

I made this lot a while back in summer.
